Sanjo holds the biggest shares in Japan for wheel shaped wheat gluten. Wheat gluten can be easily digested as it is simply gluten taken from wheat. Wheel shaped wheat gluten is made by wraping gluten around a pole, baking it and then adding another layer on top of it, bake and so forth until the desired size is achieved. This is then sliced which takes the shape of a wheel. Wheat gluten can be cooked in many ways, from steamed to boiled.
Created by 25 ramen (noodle) shop owners whom met each other for a ramen seminar and formed the "Sanjo Ramen University" study group. Currently, you can enjoy a slightly different flavored Sanjokko ramen at 10 various ramen shops around Sanjo.
Utilizing 100% Koshihikari rice, the rice is kneaded onto a bamboo skewer and grilled over a charcoal fire. Perilla flavored miso is smeared onto the Hikozaen, and as this is a good source of alpha-Linolenic acid, it has great properties against cancer and Atopic dermatitis. As no additives are added, so one can safely enjoy this local grilled rice delicacy called "Hikozaen".
The limpid Ikarashi river flows through the city of Sanjo, and from long ago the people of this area have lived closely to the river and treated it with respect. Even to this day, sake is being brewed by using the local clear streams.
